Jalapeno Cheese Kachori Recipe

Kachori is a deep-fried, crisp, and flaky Indian snack stuffed with a delicious vegetarian filling. These little bites are great to take on the go. A word of advice - pack as many as you would like in a waterproof container and keep them safe from Holi ke rang. The colours that belong in food should come from naturally vibrant herbs, spices, and cheese, of course. Happy Holi, happy snacking!

Ingredients to make Jalapeno cheese kachori recipe:

1 cup atta
4 tbsp oil + 2 cups for deep frying
¼ cup cold water (or as needed)
½ cup paneer
2 tbsp onions, chopped finely
Oil for frying

Steps to make Jalapeno cheese kachori recipe:

Form a soft dough with atta, salt, water, and 4 tbsp of neutral oil. This will take approximately 5 minutes of active kneading.

Prepare the stuffing by combining paneer, Jalapeno Cheese Dip, chopped onions, and salt in a mixing bowl. Feel free to add more dip as per your preference! The more, the better.

Divide the dough into little pieces and roll them into small balls. With a rolling pin, flatten each dough ball into rounds approximately 3 inches in diameter.

Place a dollop of the filling onto the center of the thinly rolled dough, then pinch the edges and seal the filling inside. A little water helps the kachori seal properly.

Heat oil in a large pan over medium high heat. Fry the kachori, flipping once, until both sides are golden brown and crispy.

Alternatively, feel free to prepare the kachoris in an air-fryer! Brush both sides of the uncooked kachoris with a little oil and air-fry at 180°C for about 10 minutes or until golden.
